APPLE MINCEMEAT COBBLER

Ingredients

  • FOR THE COBBLER:
  • 2 cups apple pie filling
  • 2 cups mincemeat
  • 1/4 cup lemon juice
  • 1 cup brown sugar
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/3 cup butter
  • brandy or rum to taste

  • FOR THE CRUST:
  • 2 cups biscuit mix
  • 1/4 pound butter, softened
  • 6 tsp. boiling water

Directions

    CRUST: Put biscuit mix in bowl with softened butter. Pour in boiling water. Mix with a fork until mixture forms a ball. Grease hands and pat out a piece of dough. Cover with plastic wrap.

    COBBLER:
    Combine all cobbler ingredients, and place in greased 8x13 inch pan. Remove plastic wrap from crust and place on top of cobbler. Bake at 475-degrees for 30 minutes until hot and bubbly and crust is brown.

    Serve with vanilla ice cream.
