CHEESE-BEEF ENCHILADAS

Ingredients

  • 3/4 lb. ground beef
  • 1.5 cups diced green pepper
  • 1 pkg. Taco seasoning mix
  • 1/2 cup water
  • 8 flour tortillas
  • 8 oz. shredded cheddar cheese or 4-cheese Mexican blend
  • 1 cup medium salsa or picante sauce
  • 1 medium onion, chopped

Directions

    Cook meat and pepper in a non-stick skillet stirring until meat crumbles and is no longer pink. Add taco seasoning and 1/2 cup water. Simmer 5 minutes uncovered, stirring occasionally.

    Spoon about 1/2 cup of meat mixture evenly down the center of each tortilla. A 2 tablespoons of cheese to each. Place seam side down in a 13x9x2 baking dish, sprayed with Pam. Spread salsa evenly over each enchilada. Bake 18 minutes at 375 degrees. Sprinkle with remaining cheese and continue baking until cheese melts.

    Serve with chopped onion.
