CREAM SCONES

Ingredients

  • 2 Cups all purpose unbleached flour
  • 1 Tbl. double acting baking powder
  • 1/2 tsp. salt
  • 1/2 cup granulated sugar
  • 2/3 cup heavy whipping cream
  • 1 scant cup of raisins

Directions

    Sift the flour, salt, and baking powder, and sugar into a large bowl. Add the raisins and whipping cream.
    Mix together with a large fork until it forms a mass.
    Use your hands or a spatula to gather all of the flour together and turn it out onto a floured board.
    Knead it 6-8 times and pat or roll into a circle about 1/2 inch thick.
    Cut with a round cutter (heart-shapped or other similar form). Avoid twisting the cutter as you do it.
    Place the rounds onto a baking sheet fairly close together so that the sides do not get to crusty.
    Bake at 425 degrees for 12-15 minutes in a hot oven. Makes approximately 24 medium size scones.
    Serve with fresh strawberries with clotted cream or whipped heavy cream. You can also serve them with butter and strawberry jam.
