EVER READY MUFFINS

Brass Bell Floating Bed & Breakfast

Ingredients

  • 5 cups all purpose flour
  • 5 teaspoons baking soda
  • 1 tablespoon salt
  • 2 cups brown sugar
  • 3 cups natural bran
  • 2 cups raisins
  • 3 eggs
  • 1 cup vegtable oil
  • 1/4 cup molasses
  • 1 quart buttermilk
  • 1 1/2 cups water

Directions

    Place all dry ingredients into one bowl, blend well. Beat eggs with oil and molasses in large bowl. Beat in milk and water. Pour wet mixture into dry ingredients. Cover and keep refrigerated. This mixture actually improves with age and can be kept in the refrigerator for up to 2 weeks. To Bake: stir batter, fill muffin tins 2/3 full then bake in preheated 400 degree oven for 20 minutes. Makes 5 dozen muffins. We keep the batter on hand and bake muffins every morning.
