Microwave Banana Pudding

Ingredients

  • 2/3 cup sugar
  • 5 tablespoons cornstarch
  • 4 cups milk
  • 2 eggs, beaten
  • 4 tablespoons vanilla
  • 4-5 medium bananas, sliced
  • Vanilla Wafers

Directions

    Mix sugar and cornstarch together. Pour milk into large microwave safe bowl. Whisk in sugar mixture until cornstarch dissolves. Microwave on high 6 minutes, stirring every two minutes. Whisk one cup of the hot milk mixture slowly into beaten eggs; return to bowl.

    Microwave on high 5 to 6 minutes longer, or until custard thickens, stirring every 30 seconds. Remove from microwave and stir in vanilla.

    Place a layer of vanilla wafers in the bottom and up the sides of a medium serving bowl. Add a layer of banana slices. Pour 1/2 of custard over wafers and bananas. Add another layer of vanilla wafers and banana slices. Add remaining custard. Top with vanilla wafers or whipped cream. 8-10 servings
