PEANUT BTR BANANA BREAD

Ingredients

  • 2Å cups all-purpose flour
  • 1 Tbsp. Baking powder
  • û tsp.salt
  • Å tsp. Ground cinnamon
  • ý cup packed brown sugar
  • ý cup granulated sugar
  • 1 cup milk
  • 2 ripe mashed bananas, (1 cup)
  • Å cup chunky peanut butter
  • 3 tbsp. Cooking oil
  • 1 tsp. vanilla
  • 1 egg, slightly beaten
  • 6 oz. Semi sweet chocolate pieces

Directions

    In a large bowl stir together flour, sugars, baking powder, salt, and cinnamon. In another bowl combine mashed bananas, milk, peanut butter, oil, vanilla and egg. Add flour mixture, stirring just till combined. Stir in chocolate pieces. Pour batter into two greased 8x4x2 inch loaf pans.

    Bake in a 350 degree oven for 50 to 55 minutes or till wooden toothpick inserted near the center comes out clean. Cool in pans for 10 min. Wrap and store over night before serving. To serve, frost with Peanut Butter Frosting.

    Peanut Butter Frosting: In a small sausepan melt 3 tablespoons chunky peanut butter and 2 tablespoons margarine or butter. Remove from heat; stir in 1 cup sifted powered sugar and 1 teaspoon vanilla. Stir in one tablespoon milk. Add more milk, if necessary till spreading consistency.
