PECAN SANDIES

From the kitchen of
Beckwood Pond Bed and Breakfast

Putney, Vermont

 

Ingredients

  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 tsp. water
  • 2 tsp. vanilla
  • 2 cups all-purpose flour, sifted
  • 1 cup chopped pecans
  • 1/4 cup confectioners sugar

Directions

    Cream butter and sugar together. Add water and vanilla; mix well. Blend in flour and nuts. Chill at least four hours. Roll dough into balls or shape into rectangles, approximately 3/4" x 2". Bake on ungreased cookie sheet at 325 degrees for 20 minutes, or until very lightly browned. Remove carefully to cooling rack, allow to cool slightly. Roll in confectioners? sugar.

    Yield: This recipe makes 2-3 dozen cookies depending upon whether you shape into balls, rectangles, or a combination of the two.
